1 cup of raw cashews – ground in blender until fine
1 1/2 cups desiccated coconut – ground in blender until fine
zest of 1 lemon
Juice of 1 lemon
4 drops doTERRA lemon essential oil
1 teaspoon vanilla powder or liquid extract
Pinch of salt
2 tablespoons maple or rice malt syrup
4 tablespoons coconut oil
1/2 cup desiccated coconut for rolling
Place all ingredients into blender and blend until all ingredients are combined and mixture is finely ground.
Roll into bite sized balls (I found a heaped teaspoon makes the best size)
Roll into coconut and pop them on a tray
Refrigerate until firm.
